Grilled Sweet Potato Wedges

Ingredients
- 2 large sweet potatoes
- 1 1/2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- Fresh lime wedges for serving, optional
Instructions
- Scrub the sweet potatoes thoroughly and cut them lengthwise into evenly sized wedges.
- Place the wedges in a large pot, cover with water, and bring to a gentle boil.
- Cook for 5 to 7 minutes, just until the wedges begin to soften but are still firm enough to hold their shape.
- Drain well and allow the sweet potatoes to cool and dry for several minutes.
- Preheat the grill to medium-high heat, about 400°F.
- Place the wedges in a large bowl and gently toss with olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper.
- Place the wedges directly on the grill and cook for 3 to 5 minutes per side, until tender with visible grill marks and lightly crisp edges.
- Transfer to a serving platter and sprinkle with fresh parsley.
- Serve warm with fresh lime wedges, if desired.
Notes & Tips
- Parboiling the sweet potatoes helps the centers cook through without burning the outside on the grill.
- Do not overcook them during parboiling or the wedges may break apart.
- For a spicier version, add a pinch of cayenne pepper to the seasoning.
- These pair especially well with grilled chicken, turkey burgers, or fish.
