Ingredients
- 2 medium zucchini, cut into thick half-moons
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into wedges
- 1 1/2 cups cherry or grape tomatoes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh parsley
- 1/4 cup crumbled feta cheese, optional
Instructions
- Preheat the grill to medium-high heat, about 400°F.
- Place the zucchini, bell peppers, red onion, and tomatoes in a large bowl. Add the olive oil, garlic, oregano, basil, smoked paprika, salt, and black pepper and toss until evenly coated.
- Transfer the vegetables to a grill basket and grill for 10 to 14 minutes, tossing every few minutes, until tender-crisp with lightly charred edges.
- Transfer the grilled vegetables to a serving bowl and toss with fresh lemon juice, lemon zest, and chopped parsley.
- Sprinkle with crumbled feta cheese, if using, and serve warm.
Notes & Tips
- Cut the vegetables into fairly large, similar-sized pieces so they cook evenly without becoming overly soft.
- Add the cherry tomatoes during the final 5 to 6 minutes of grilling if you prefer them firmer.
- The vegetables can also be cooked on the Blackstone over medium-high heat until tender-crisp with lightly charred edges.
- For extra Mediterranean flavor, add sliced Kalamata olives after grilling.
- Leftovers are excellent served cold in salads, grain bowls, or wraps.
