Ingredients

  • 1 lb whole button or cremini mushrooms, cleaned and trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the grill to medium-high heat, about 400°F.
  2. In a large bowl, toss the mushrooms with olive oil, garlic, thyme, salt, and black pepper until evenly coated.
  3. Place the mushrooms on the grill in a single layer and cook for 4 to 5 minutes on each side, until tender with lightly charred edges.
  4. Transfer to a serving platter and drizzle with fresh lemon juice.
  5. Sprinkle with chopped parsley and serve warm.

Notes & Tips

  • Choose firm mushrooms of similar size for even cooking.
  • Avoid overcrowding the grill; give the mushrooms space to sear properly.
  • For extra flavor, marinate the mushrooms in the olive oil and herbs for 15 to 30 minutes before grilling.
  • A grill basket can be used to prevent smaller mushrooms from falling through the grates.
  • These mushrooms pair well with grilled meats, fish, or as a topping for salads and grain bowls.
