Grilled Balsamic Mushrooms
Serves 4 servings
Prep: 15 minutes • Cook: 12 minutes
Juicy mushrooms grilled in a savory blend of balsamic vinegar, olive oil, garlic, and thyme until tender and lightly charred. Naturally low in calories and a good source of B vitamins and antioxidants, they make a flavorful and satisfying addition to grilled meats, bowls, or salads.
Ingredients
- 1 lb whole button or cremini mushrooms, cleaned and stems trimmed
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar, divided
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the grill to medium-high heat, about 400°F. Clean the mushrooms with a damp paper towel or soft brush and trim the stem ends.
- Combine the olive oil, 1 tablespoon balsamic vinegar, thyme, salt, and black pepper. Add the mushrooms and toss until evenly coated.
- Thread the mushrooms onto skewers or place them in a grill basket and grill for 6 to 8 minutes, turning occasionally, until browned and beginning to soften.
- Add the minced garlic and continue grilling for another 1 to 2 minutes, turning frequently, until the garlic is fragrant and the mushrooms are tender.
- Remove from the grill, drizzle with the remaining 1 tablespoon balsamic vinegar, sprinkle with fresh parsley, and serve warm.
Notes & Tips
- Cremini mushrooms provide a slightly deeper, earthier flavor, while white button mushrooms work equally well.
- Avoid soaking mushrooms when cleaning them; they absorb water quickly and may steam instead of developing browned, caramelized edges.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling. A grill basket is another easy option for keeping smaller mushrooms from falling through the grates.
- The mushrooms can also be cooked on the Blackstone over medium-high heat for about 7 to 9 minutes, tossing occasionally until browned and tender.
- For extra flavor, sprinkle with a little Parmesan immediately after cooking.
