Garlic Herb Grilled Zucchini

Serves 4 servings

Ingredients

  • 3 medium zucchini
  • 1 1/2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the grill to medium-high heat, about 400°F.
  2. Trim the ends from the zucchini and slice lengthwise into strips about 1/4 to 1/2 inch thick.
  3. In a small bowl, combine the olive oil, garlic, Italian seasoning, smoked paprika, salt, and black pepper.
  4. Brush both sides of the zucchini slices with the seasoned oil mixture.
  5. Place the zucchini directly on the hot grill grates.
  6. Grill for 3 to 4 minutes, until grill marks develop and the zucchini begins to soften.
  7. Flip and grill for another 2 to 3 minutes, until tender but not mushy.
  8. Transfer to a serving platter and drizzle with fresh lemon juice.
  9. Sprinkle with chopped parsley and serve warm.

Notes & Tips

  • Cut the zucchini into evenly sized slices so they cook at the same rate.
  • Do not slice the zucchini too thin or it may become soft and difficult to handle on the grill.
  • For a little extra flavor, sprinkle with grated Parmesan immediately after grilling.
  • Leftovers work well chopped into salads, omelets, or grain bowls.
