Blackstone Garlic Cabbage & Onions

Serves 6 servings

Prep: 15 minutes • Cook: 15 minutes

Fresh cabbage and sweet onion seared on the Blackstone until tender with caramelized, lightly crispy edges, then finished with garlic and a splash of apple cider vinegar. Naturally low in calories and rich in fiber and vitamin C, this simple and satisfying side delivers plenty of flavor from everyday ingredients.

Ingredients

  • 1 small green cabbage, about 2 lbs
  • 1 large sweet onion, sliced
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Remove any damaged outer leaves from the cabbage, cut out the core, and slice the cabbage into strips about 1/2 inch wide.
  2. Preheat the Blackstone griddle to medium-high heat, about 375°F to 400°F.
  3. Add the olive oil, cabbage, and onion to the griddle. Season with salt, smoked paprika, and black pepper and spread into an even layer.
  4. Cook for 8 to 10 minutes, tossing occasionally, until the cabbage is tender and the edges are browned and lightly caramelized. If needed, add 1 to 2 tablespoons of water and cover briefly with a melting dome to help soften the cabbage.
  5. Reduce the heat to medium, add the butter and garlic, and toss for about 1 minute until the garlic is fragrant.
  6. Drizzle with apple cider vinegar, toss briefly, then remove from the heat and finish with fresh parsley.

Notes & Tips

  • Do not slice the cabbage too thin; slightly thicker strips hold their texture and develop better caramelized edges.
  • Avoid constantly stirring the cabbage. Giving it time against the hot griddle creates better browning and flavor.
  • For a little heat, add crushed red pepper flakes with the garlic.
  • A large cast-iron skillet works well as an alternative to the Blackstone.
  • This inexpensive and filling side pairs especially well with steak, chicken, turkey burgers, pork, or grilled sausage.
