Blackstone Charred Peppers & Onions

Blackstone Charred Peppers & Onions

Serves 4 servings

Prep: 15 minutes • Cook: 15 minutes

Colorful bell peppers and sweet onion seared on the Blackstone until tender-crisp with smoky, caramelized edges, then finished with garlic and a touch of balsamic. Naturally packed with vitamin C, antioxidants, and fiber, this versatile side adds plenty of color and flavor without weighing down the meal.

Ingredients

  • 1 large red bell pepper, sliced into strips
  • 1 large yellow bell pepper, sliced into strips
  • 1 large sweet onion, sliced into wedges
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the Blackstone griddle to medium-high heat, about 375°F to 400°F. Toss the peppers and onion with olive oil, salt, black pepper, smoked paprika, and Italian seasoning.
  2. Spread the vegetables across the hot griddle in a single layer and cook for 3 to 4 minutes without moving too much, allowing them to develop lightly charred, caramelized edges.
  3. Toss and continue cooking for another 3 to 5 minutes, until the peppers are tender-crisp and the onions are softened and lightly caramelized.
  4. Reduce the heat to medium, add the garlic, and toss for about 1 minute until fragrant. Drizzle with balsamic vinegar and cook another 30 to 60 seconds, until it reduces slightly and lightly glazes the vegetables.
  5. Remove from the heat, sprinkle with fresh parsley, and serve warm.

Notes & Tips

  • Cut the peppers and onions into similar-sized pieces so they cook evenly while keeping the peppers slightly crisp.
  • Avoid overcrowding or constantly tossing the vegetables during the initial sear; good contact with the hot griddle creates better char and caramelization.
  • Add sliced jalapeño or poblano pepper for extra heat and smoky flavor.
  • A large cast-iron skillet or grill basket works well instead of the Blackstone. The vegetables also make a great topping for steak, chicken, burgers, fajitas, tacos, or grain bowls.
