Lemon Garlic Cod

Light, flaky cod baked with fresh lemon, garlic, and herbs for a simple meal that delivers plenty of lean protein without feeling heavy. Cod is naturally low in fat and pairs especially well with roasted vegetables, quinoa, or a crisp green salad.

Ingredients

  • 4 cod fillets, about 6 oz each
  • 1 1/2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried parsley
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F and lightly coat a baking dish or sheet pan with cooking spray or parchment paper.
  2. Pat the cod fillets dry with paper towels and arrange them in the prepared baking dish.
  3. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried parsley, smoked paprika, salt, and black pepper.
  4. Brush the lemon-garlic mixture evenly over the cod fillets.
  5. Place one or two lemon slices over each fillet.
  6. Bake for 10 to 14 minutes, depending on thickness, until the cod is opaque and flakes easily with a fork.
  7. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes & Tips

  • Cod is very lean and can dry out quickly, so avoid overcooking it.
  • For extra browning, place the cod under the broiler for the final 1 to 2 minutes.
  • Pairs well with roasted asparagus, broccoli, quinoa, or cauliflower rice.
