Lemon Garlic Cod
Serves 4 servings
Light, flaky cod baked with fresh lemon, garlic, and herbs for a simple meal that delivers plenty of lean protein without feeling heavy. Cod is naturally low in fat and pairs especially well with roasted vegetables, quinoa, or a crisp green salad.
Ingredients
- 4 cod fillets, about 6 oz each
- 1 1/2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried parsley
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, sliced
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F and lightly coat a baking dish or sheet pan with cooking spray or parchment paper.
- Pat the cod fillets dry with paper towels and arrange them in the prepared baking dish.
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried parsley, smoked paprika, salt, and black pepper.
- Brush the lemon-garlic mixture evenly over the cod fillets.
- Place one or two lemon slices over each fillet.
- Bake for 10 to 14 minutes, depending on thickness, until the cod is opaque and flakes easily with a fork.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes & Tips
- Cod is very lean and can dry out quickly, so avoid overcooking it.
- For extra browning, place the cod under the broiler for the final 1 to 2 minutes.
- Pairs well with roasted asparagus, broccoli, quinoa, or cauliflower rice.
