Sweet banana slices sandwich creamy peanut butter before getting a rich dark chocolate coating and a sprinkle of crunchy peanuts. Kept in the freezer for an easy grab-and-go treat, these little bites satisfy the chocolate-peanut-butter craving with simple ingredients and naturally portion-controlled servings.

Ingredients

  • 2 medium ripe bananas
  • 1/3 cup natural creamy peanut butter
  • 4 oz dark chocolate, at least 70% cacao
  • 1 teaspoon coconut oil
  • 2 tablespoons finely chopped roasted peanuts
  • Pinch of flaky sea salt, optional

Instructions

  1. Line a small baking sheet or freezer-safe plate with parchment paper.
  2. Peel the bananas and cut them into approximately 1/4-inch-thick slices, making 24 similar-sized pieces.
  3. Spread about 1 teaspoon of peanut butter onto 12 banana slices.
  4. Top each with another banana slice and gently press together to form a small sandwich.
  5. Arrange the banana bites on the prepared parchment and freeze for 30 to 45 minutes, until firm.
  6. Place the dark chocolate and coconut oil in a microwave-safe bowl and heat in 20-second intervals, stirring between each interval, until completely melted and smooth.
  7. Using a fork, dip each chilled banana bite into the melted chocolate, coating it completely or leaving a small portion of banana exposed if preferred.
  8. Return each coated bite to the parchment and immediately sprinkle with a small amount of chopped peanuts and flaky sea salt, if using.
  9. Freeze for another 30 minutes, or until the chocolate is firm and the banana centers are frozen.
  10. Transfer the bites to an airtight freezer-safe container and keep frozen until ready to serve.

Notes & Tips

  • Choose ripe bananas with good sweetness but avoid extremely soft or heavily browned bananas, which can be difficult to assemble.
  • Natural peanut butter works well, but stir it thoroughly before using so the filling is not overly oily.
  • For a lighter chocolate coating, drizzle the melted chocolate over the frozen banana sandwiches instead of completely dipping them.
  • Chopped pecans or almonds can be substituted for the peanuts.
  • For an extra little treat, sprinkle a few bites with unsweetened toasted coconut before the chocolate sets.
  • Verify that the peanut butter, dark chocolate, and roasted peanuts are gluten-free if needed.
  • Allow the bites to sit at room temperature for 3 to 5 minutes before eating for a slightly softer, creamier banana center.
  • Store in an airtight container in the freezer for up to 2 weeks.
