GFFRFZ
Ripe bananas, creamy peanut butter, Greek yogurt, and dark chocolate come together in soft, moist cake bars with plenty of peanut-butter-banana flavor. Naturally sweetened with honey and finished with a simple chocolate swirl, these bars land somewhere between banana bread and dessert—in a very good way.
Ingredients
- 2 ripe bananas, mashed
- 1/2 cup plain Greek yogurt
- 1/3 cup natural creamy peanut butter
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free oat flour
- 1 teaspoon baking powder
- 1/3 cup dark chocolate chips
- 2 tablespoons melted dark chocolate for swirling
Instructions
- Preheat the oven to 350°F and lightly grease or line an 8-inch square baking dish with parchment paper.
- Add the bananas, Greek yogurt, peanut butter, honey, egg, vanilla, oat flour, and baking powder to a large bowl and stir until combined.
- Stir in the dark chocolate chips and spread the batter evenly in the prepared baking dish.
- Drizzle the melted dark chocolate over the top and swirl it through the batter with a knife.
- Bake for 22 to 28 minutes, until the top is lightly golden and the center is set but still soft.
- Cool before cutting into 9 bars.
Notes & Tips
- Very ripe bananas provide the best sweetness and banana flavor.
- Natural peanut butter works well; stir it thoroughly before measuring.
- Do not overbake. Keeping the center slightly soft gives the bars their moist, cake-like texture.
- For a little extra crunch, add 1/4 cup chopped pecans or peanuts.
- Verify that the oat flour, peanut butter, baking powder, and dark chocolate are gluten-free if needed.
- Store in an airtight container in the refrigerator for up to 5 days.
- The bars can be frozen individually for up to 2 months.
