GF

Fresh pineapple caramelizes beautifully over high heat, creating a warm, juicy dessert with lightly charred edges and plenty of natural sweetness. Finished with cinnamon, cool Greek yogurt, toasted coconut, and crunchy pecans, it delivers a satisfying mix of warm, creamy, and crisp textures without relying on heavy added sugar.

Ingredients

  • 1 fresh pineapple, peeled, cored, and cut into 8 thick rings or spears
  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon honey or pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 cup plain Greek yogurt
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons chopped pecans
  • Additional cinnamon for serving, optional

Instructions

  1. Preheat a grill or Blackstone griddle to medium-high heat.
  2. In a small bowl, combine the melted butter or coconut oil, honey or maple syrup, cinnamon, and vanilla.
  3. Lightly brush the pineapple on both sides with the cinnamon mixture.
  4. Place the pineapple directly on the grill grates or hot griddle and cook for 3 to 4 minutes per side, until warmed through and deeply caramelized in spots.
  5. While the pineapple cooks, lightly toast the shredded coconut and chopped pecans in a dry skillet or on a cooler area of the griddle for 1 to 2 minutes, stirring frequently. Remove as soon as they become fragrant.
  6. Remove the pineapple from the heat and allow it to rest for 2 to 3 minutes.
  7. Divide the warm pineapple among four plates and top each serving with Greek yogurt.
  8. Sprinkle with the toasted coconut, pecans, and an additional pinch of cinnamon if desired.
  9. Serve while the pineapple is still warm and the yogurt is cool.

Notes & Tips

  • Fresh pineapple works best because its natural sugars caramelize exceptionally well over high heat.
  • For the Blackstone, lightly oil the cooking surface and avoid moving the pineapple too frequently so it develops a good caramelized crust.
  • On a charcoal or Kamado-style grill, cook over direct heat and watch the honey or maple syrup carefully because it can darken quickly.
  • Toast the coconut and pecans separately if necessary—they can go from toasted to burned very quickly.
  • For an extra treat, finish each serving with a small drizzle of warm honey or a few shavings of dark chocolate.
