GFFZ

Creamy Greek yogurt is loaded with strawberries, blueberries, crunchy nuts, and a little gluten-free granola, then frozen and broken into rustic pieces for an easy grab-and-go treat. Lightly sweetened and packed with fruit, protein, and satisfying crunch, this freezer favorite is simple enough for everyday snacking but still feels like dessert.

Ingredients

  • 2 cups plain Greek yogurt
  • 1 tablespoon honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup fresh strawberries, diced
  • 1/2 cup fresh blueberries
  • 1/4 cup chopped pecans or almonds
  • 1/4 cup gluten-free granola
  • 1 oz dark chocolate, melted, optional
  • 1 teaspoon honey or pure maple syrup for drizzling, optional

Instructions

  1. Line a small rimmed baking sheet or freezer-safe tray with parchment paper.
  2. In a medium bowl, stir together the Greek yogurt, honey or maple syrup, and vanilla until smooth.
  3. Spread the yogurt mixture evenly over the prepared parchment into a layer approximately 1/2 inch thick.
  4. Scatter the diced strawberries and blueberries evenly over the yogurt, gently pressing some of the fruit into the surface.
  5. Sprinkle the chopped pecans or almonds and gluten-free granola over the berries.
  6. Drizzle lightly with additional honey or maple syrup if desired.
  7. For a chocolate version, drizzle the melted dark chocolate lightly over the top.
  8. Freeze for at least 3 to 4 hours, or until completely firm.
  9. Lift the frozen bark from the tray using the parchment and break or cut it into irregular pieces.
  10. Transfer the pieces to an airtight freezer-safe container and keep frozen until ready to serve.
  11. Allow the bark to sit at room temperature for 2 to 3 minutes before eating for a slightly softer, creamier texture.

Notes & Tips

  • Pat the berries dry before adding them to the yogurt to help reduce ice crystals.
  • Do not spread the yogurt too thin. A thicker layer gives the finished bark a creamier texture and makes the pieces more satisfying.
  • The fruit, nuts, and granola can be lightly pressed into the yogurt before freezing so the toppings stay attached when the bark is broken apart.
  • Pecans add a rich toasted flavor, while almonds provide a firmer crunch. Either works well.
  • Verify that the granola and optional dark chocolate are certified gluten-free if needed.
  • The dark chocolate drizzle is optional and can be left off for a simpler version closer to the original recipe.
  • Raspberries, blackberries, or a mixture of berries can be substituted depending on what is available.
  • Store in an airtight container in the freezer for up to 2 weeks.
