Creamy Greek yogurt, juicy strawberries, crunchy almonds, and a drizzle of rich dark chocolate come together in a cool, refreshing frozen treat. Naturally high in protein and lightly sweetened, this easy yogurt bark delivers plenty of creamy, fruity, and chocolate flavor in a grab-and-go bite.
Ingredients
- 2 cups plain Greek yogurt
- 2 tablespoons honey or pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, thinly sliced
- 1/4 cup chopped almonds
- 2 oz dark chocolate, at least 70% cacao
- 1 teaspoon coconut oil
- Pinch of flaky sea salt, optional
Instructions
- Line a small rimmed baking sheet or freezer-safe pan with parchment paper.
- In a medium bowl, stir together the Greek yogurt, honey or maple syrup, and vanilla until smooth.
- Spread the yogurt mixture evenly over the parchment into a layer about 1/4 to 1/2 inch thick.
- Arrange the sliced strawberries evenly over the yogurt and gently press them into the surface.
- Sprinkle the chopped almonds over the strawberries.
- Place the dark chocolate and coconut oil in a microwave-safe bowl and heat in 20-second intervals, stirring between each interval, until smooth.
- Drizzle the melted dark chocolate evenly over the yogurt bark.
- Finish with a very small pinch of flaky sea salt if desired.
- Freeze for at least 3 hours, or until completely firm.
- Break or cut the frozen bark into pieces and serve immediately.
Notes & Tips
- Pat the strawberries dry before adding them to the yogurt to reduce excess ice crystals.
- Do not spread the yogurt too thin or the bark will become brittle and melt quickly.
- For additional crunch, substitute chopped pecans or pistachios for the almonds.
- Blueberries, raspberries, or a mixture of berries can be substituted for the strawberries.
- Verify that the dark chocolate is certified gluten-free if needed.
- Store the bark in an airtight freezer-safe container with parchment between layers for up to 2 weeks.
- Allow the bark to sit at room temperature for 2 to 3 minutes before eating if it is frozen very hard.
