Dark Chocolate Peanut Butter Bites
Serves 12 bites
Ingredients
- 1/2 cup natural peanut butter
- 1/2 cup gluten-free rolled oats
- 2 tablespoons almond flour
- 1 tablespoon honey or pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 oz dark chocolate, at least 70% cacao
- 1 teaspoon coconut oil
Instructions
- Line a small baking sheet or plate with parchment paper.
- In a medium bowl, combine the peanut butter, rolled oats, almond flour, honey or maple syrup, vanilla, and salt.
- Stir until the mixture is evenly combined and firm enough to hold its shape.
- Scoop about 1 tablespoon of the mixture at a time and roll into small balls.
- Place the bites on the prepared parchment and refrigerate for 15 to 20 minutes.
- Place the dark chocolate and coconut oil in a microwave-safe bowl.
- Microwave in 20-second intervals, stirring between each interval, until smooth and completely melted.
- Dip each chilled peanut butter bite partially into the melted chocolate, allowing excess chocolate to drip back into the bowl.
- Return the bites to the parchment and refrigerate for another 15 to 20 minutes, until the chocolate is firm.
- Store chilled until ready to serve.
Notes & Tips
- Natural peanut butter varies in consistency. Add a little more almond flour if the mixture is too soft.
- For portion control, keep the bites small—these are rich even without much added sweetener.
- Store in an airtight container in the refrigerator for up to 5 days.
- The finished bites can also be frozen and thawed for a few minutes before eating.
