Coconut Mango Chia Pudding

Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened coconut milk
- 1 tablespoon pure maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1/2 cup diced fresh mango
Instructions
- In a medium bowl, whisk together the chia seeds, coconut milk, maple syrup or honey, and vanilla extract.
- Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
- Cover the bowl and refrigerate for at least 2 hours or overnight, until the pudding has thickened.
- Before serving, stir the pudding well and divide it into two serving dishes.
- Top each serving with diced fresh mango.
- Serve chilled.
