Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened coconut milk
  • 1 tablespoon pure maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup diced fresh mango

Instructions

  1. In a medium bowl, whisk together the chia seeds, coconut milk, maple syrup or honey, and vanilla extract.
  2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight, until the pudding has thickened.
  4. Before serving, stir the pudding well and divide it into two serving dishes.
  5. Top each serving with diced fresh mango.
  6. Serve chilled.
