Cinnamon Baked Peaches
Serves 4 servings
Ingredients
- 4 ripe peaches
- 1 tablespoon melted butter or coconut oil
- 1 teaspoon ground cinnamon
- 1 tablespoon pure maple syrup or honey
- 1/2 teaspoon vanilla extract
- 2 tablespoons chopped pecans
- 1/2 cup plain or vanilla Greek yogurt, optional
Instructions
- Preheat the oven to 375°F and lightly grease a baking dish.
- Wash the peaches, cut them in half, and remove the pits.
- Arrange the peach halves cut-side up in the prepared baking dish.
- In a small bowl, combine the melted butter or coconut oil, cinnamon, maple syrup or honey, and vanilla.
- Brush the mixture evenly over the cut surface of each peach.
- Sprinkle the chopped pecans over the peaches.
- Bake for 20 to 25 minutes, until the peaches are tender and their juices begin to caramelize around the edges.
- Remove from the oven and allow the peaches to cool for about 5 minutes.
- Serve warm on their own or topped with a spoonful of Greek yogurt.
Notes & Tips
- Choose peaches that are ripe but still firm enough to hold their shape while baking.
- Nectarines work well as a substitute.
- For additional crunch, add a small amount of gluten-free granola just before serving.
- Leftovers can be refrigerated and reheated briefly or eaten chilled.
