GFFR
Tender cinnamon-spiced apples bake beneath a golden oat, almond, and pecan crumble for a warm dessert with all the comfort of classic apple crisp. Naturally sweet apples and a touch of maple syrup provide plenty of sweetness, while the crunchy whole-grain topping keeps every serving satisfying without the heavy sugar and butter of a traditional crumble.
Ingredients
- 5 medium apples, peeled, cored, and sliced
- 1 tablespoon fresh lemon juice
- 1 tablespoon pure maple syrup or honey
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 1/2 cup gluten-free rolled oats
- 1/3 cup almond flour
- 1/3 cup chopped pecans
- 2 tablespoons melted butter or coconut oil
- 1 tablespoon pure maple syrup or honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- Plain or vanilla Greek yogurt for serving, optional
Instructions
- Preheat the oven to 375°F and lightly grease an 8-inch cast-iron skillet or small baking dish.
- In a large bowl, combine the sliced apples, lemon juice, maple syrup or honey, vanilla, 1 1/2 teaspoons cinnamon, nutmeg, and cornstarch.
- Toss until the apples are evenly coated, then transfer them to the prepared skillet or baking dish.
- In a separate bowl, combine the rolled oats, almond flour, chopped pecans, remaining 1/2 teaspoon cinnamon, and salt.
- Add the melted butter or coconut oil and remaining tablespoon of maple syrup or honey.
- Stir until the topping is evenly moistened and small crumbles begin to form.
- Sprinkle the oat and pecan mixture evenly over the apples.
- Bake for 30 to 35 minutes, until the apples are tender and bubbling around the edges and the crumble is golden brown.
- If the topping begins to brown before the apples are tender, loosely cover the skillet with foil for the remaining cooking time.
- Remove from the oven and allow the crumble to rest for 10 minutes before serving.
- Spoon into bowls while warm and top with cold Greek yogurt if desired.
Notes & Tips
- A combination of sweet and tart apples gives the crumble the best flavor. Honeycrisp, Fuji, Gala, and Granny Smith all work well.
- Slice the apples approximately the same thickness so they soften evenly while baking.
- For additional texture, leave the peel on some or all of the apples.
- The cast-iron skillet creates lightly caramelized edges and keeps the crumble warm at the table.
- For outdoor cooking, bake in cast iron on a pellet grill at 375°F for approximately 35 to 40 minutes, until the apples are bubbling and the topping is golden.
- On a Kamado-style grill, use indirect heat at approximately 375°F with the lid closed.
- For an occasional richer dessert, serve warm with a small scoop of vanilla frozen yogurt.
- Leftovers can be refrigerated for up to 4 days and reheated briefly before serving.
