  • 1 teaspoon butter or coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon pure maple syrup or honey
  • 1 1/2 cups plain Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons gluten-free granola
  • 2 tablespoons chopped walnuts or pecans

Instructions

  1. Heat the butter or coconut oil in a small skillet over medium heat.
  2. Add the diced apple and cinnamon and cook for 5 to 7 minutes, stirring occasionally, until the apple begins to soften.
  3. Stir in the maple syrup or honey and cook for another 1 to 2 minutes, until the apples are tender and lightly caramelized.
  4. Remove the skillet from the heat and allow the apple mixture to cool for several minutes.
  5. In a small bowl, stir the vanilla extract into the Greek yogurt.
  6. Divide half of the yogurt between two glasses or bowls.
  7. Top each with a layer of the cinnamon apples, then add the remaining yogurt.
  8. Finish with the remaining apples, gluten-free granola, and chopped nuts.
  9. Serve immediately, or chill briefly before serving.

Notes & Tips

  • Allow the cooked apples to cool slightly before layering so they do not make the yogurt watery.
  • For a lighter version, omit the granola or reduce the sweetener.
  • Pears can be substituted for the apples.
  • Verify that the granola is certified gluten-free if needed.
