Apple Cinnamon Yogurt Parfait

Ingredients
- 1 medium apple, peeled and diced
- 1 teaspoon butter or coconut oil
- 1/2 teaspoon ground cinnamon
- 1 teaspoon pure maple syrup or honey
- 1 1/2 cups plain Greek yogurt
- 1/2 teaspoon vanilla extract
- 2 tablespoons gluten-free granola
- 2 tablespoons chopped walnuts or pecans
Instructions
- Heat the butter or coconut oil in a small skillet over medium heat.
- Add the diced apple and cinnamon and cook for 5 to 7 minutes, stirring occasionally, until the apple begins to soften.
- Stir in the maple syrup or honey and cook for another 1 to 2 minutes, until the apples are tender and lightly caramelized.
- Remove the skillet from the heat and allow the apple mixture to cool for several minutes.
- In a small bowl, stir the vanilla extract into the Greek yogurt.
- Divide half of the yogurt between two glasses or bowls.
- Top each with a layer of the cinnamon apples, then add the remaining yogurt.
- Finish with the remaining apples, gluten-free granola, and chopped nuts.
- Serve immediately, or chill briefly before serving.
Notes & Tips
- Allow the cooked apples to cool slightly before layering so they do not make the yogurt watery.
- For a lighter version, omit the granola or reduce the sweetener.
- Pears can be substituted for the apples.
- Verify that the granola is certified gluten-free if needed.
