Leftover smoked or rotisserie chicken, black beans, corn, tomatoes, and warm Southwestern spices come together in a hearty tortilla soup with plenty of protein and smoky flavor. Everything cooks in one pot, making this an easy way to turn leftover chicken into a completely different meal.

Ingredients

  • 3 cups cooked smoked or rotisserie chicken, chopped or shredded
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced (about 1 tablespoon jarred minced garlic)
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can no-salt-added diced tomatoes
  • 1 cup frozen or canned corn, drained
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh lime juice (about 1 medium lime)
  • 1/4 cup chopped fresh cilantro, optional
  • Crushed gluten-free tortilla chips, avocado, or plain Greek yogurt for serving, optional

Instructions

  1. Heat the olive oil in a large pot over medium heat and cook the onion and bell pepper for 4 to 5 minutes.
  2. Add the garlic, cumin, smoked paprika, chili powder, and oregano and cook for about 30 seconds.
  3. Add the chicken, black beans, tomatoes, corn, and chicken broth and stir everything together.
  4. Bring to a simmer and cook for 15 to 20 minutes.
  5. Stir in the lime juice and serve with cilantro and your favorite toppings.

Notes & Tips

  • Smoked chicken is especially good in this soup because the smoky flavor carries throughout the broth.
  • Rotisserie chicken works just as well and makes this an easy weeknight soup.
  • For more heat, add diced jalapeño, cayenne, or your favorite hot sauce.
  • Crushed tortilla chips add the classic tortilla-soup crunch without needing to fry tortilla strips.
  • Avocado and a spoonful of Greek yogurt make great toppings.
  • Add a little extra chicken broth when reheating if the soup becomes thicker after refrigeration.
  • Verify that the broth, tortilla chips, and packaged ingredients are gluten-free if needed.
  • Refrigerate for up to 4 days or freeze individual portions for up to 3 months.
