Ingredients
- 3 cups cooked rotisserie or smoked chicken, chopped or shredded
- 3/4 cup plain Greek yogurt
- 1 tablespoon mayonnaise, optional
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice (about 1/2 medium lemon)
- 2 celery stalks, finely chopped
- 1 cup seedless red grapes, halved
- 1/3 cup chopped pecans
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Pinch of salt, to taste
- Romaine or butter lettuce leaves, for serving, optional
Instructions
- In a large bowl, mix the Greek yogurt, mayonnaise if using, Dijon mustard, lemon juice, garlic powder, black pepper, and salt.
- Add the shredded chicken, chopped celery, grapes, and pecans.
- Stir everything together until the chicken is evenly coated.
- Taste and adjust the seasoning if needed.
- Serve immediately in lettuce wraps, on a sandwich, or refrigerate until ready to eat.
Notes & Tips
- Rotisserie chicken works great, but leftover smoked chicken adds a delicious smoky flavor.
- Use plain, unsweetened Greek yogurt. Full-fat or 2% yogurt gives a slightly creamier texture.
- For extra crunch, add diced apple or a little finely chopped red onion.
- Walnuts or sliced almonds can replace the pecans.
- For a sweeter version, add an extra handful of grapes instead of adding sugar.
- Refrigerate in an airtight container for up to 3 to 4 days, counting from when the chicken was originally cooked.
- Keep lettuce or bread separate until serving to prevent sogginess.
