GFHPFR

Smoky leftover chicken, tender noodles, mushrooms, and peas come together in a creamy garlic-Parmesan sauce for an easy comfort-food dinner. Greek yogurt and a little sour cream keep the sauce rich and creamy without making it overly heavy, making this a great second meal for leftover smoked or rotisserie chicken.

Ingredients

  • 3 cups cooked smoked or rotisserie chicken, chopped or shredded
  • 8 oz gluten-free pasta or egg-style noodles
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced (about 1 tablespoon jarred minced garlic)
  • 1 cup low-sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 1/3 cup sour cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup frozen peas
  • 1 teaspoon House AP Seasoning
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, optional

Instructions

  1. Cook the noodles according to package directions and drain.
  2. Heat the olive oil in a large skillet over medium heat and cook the mushrooms and onion for 4 to 5 minutes.
  3. Add the garlic, chicken broth, House AP Seasoning, chicken, and peas and cook for another 3 to 4 minutes.
  4. Remove from the heat and stir in the Greek yogurt, sour cream, Parmesan, and black pepper.
  5. Add the cooked noodles, stir everything together, and serve warm.

Notes & Tips

  • Smoked chicken is especially good in this recipe because the smoky flavor carries through the creamy sauce.
  • Rotisserie chicken works just as well when smoked chicken is not available.
  • Remove the skillet from direct heat before adding the Greek yogurt and sour cream to help keep the sauce smooth.
  • Add a splash of chicken broth if the sauce becomes thicker than you like.
  • Spinach can be substituted for the peas or added along with them.
  • For a little extra flavor, add crushed red pepper flakes or additional Parmesan before serving.
  • Verify that the noodles and packaged ingredients are certified gluten-free if needed.
  • Refrigerate leftovers for up to 4 days and reheat gently.
