Berry Chia Pudding

Creamy chia pudding made with almond milk, warm cinnamon, and fresh mixed berries for an easy make-ahead breakfast. Chia seeds provide fiber and healthy fats, while the berries add natural sweetness, vitamins, and antioxidants.
Ingredients
- 1 cup unsweetened almond milk
- 1/4 cup chia seeds
- 1/2 teaspoon vanilla extract
- 1 tablespoon honey or pure maple syrup
- 1/4 teaspoon cinnamon
- 1/2 cup fresh mixed berries, such as blueberries, strawberries, and raspberries
- 2 tablespoons sliced almonds, optional
- Extra berries for topping
Instructions
- Add the almond milk, chia seeds, vanilla, honey or maple syrup, and cinnamon to a bowl or jar.
- Stir thoroughly and let sit for about 5 minutes.
- Stir again to break up any clumps of chia seeds.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- When ready to serve, stir the pudding and divide between two bowls or jars.
- Top with the mixed berries and sliced almonds, if using.
Notes & Tips
- Perfect for meal prep. Store covered in the refrigerator for up to 3 to 4 days.
- If the pudding becomes thicker than you like, stir in a splash of almond milk before serving.
- Frozen berries work too; thaw them overnight in the refrigerator.
- For a slightly sweeter version, add another teaspoon of honey or maple syrup when serving.
