Berry Chia Pudding

Berry Chia Pudding

Serves 2

Creamy chia pudding made with almond milk, warm cinnamon, and fresh mixed berries for an easy make-ahead breakfast. Chia seeds provide fiber and healthy fats, while the berries add natural sweetness, vitamins, and antioxidants.

Ingredients

  • 1 cup unsweetened almond milk
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon honey or pure maple syrup
  • 1/4 teaspoon cinnamon
  • 1/2 cup fresh mixed berries, such as blueberries, strawberries, and raspberries
  • 2 tablespoons sliced almonds, optional
  • Extra berries for topping

Instructions

  1. Add the almond milk, chia seeds, vanilla, honey or maple syrup, and cinnamon to a bowl or jar.
  2. Stir thoroughly and let sit for about 5 minutes.
  3. Stir again to break up any clumps of chia seeds.
  4. Cover and refrigerate for at least 4 hours, preferably overnight.
  5. When ready to serve, stir the pudding and divide between two bowls or jars.
  6. Top with the mixed berries and sliced almonds, if using.

Notes & Tips

  • Perfect for meal prep. Store covered in the refrigerator for up to 3 to 4 days.
  • If the pudding becomes thicker than you like, stir in a splash of almond milk before serving.
  • Frozen berries work too; thaw them overnight in the refrigerator.
  • For a slightly sweeter version, add another teaspoon of honey or maple syrup when serving.
