Apple Cinnamon Yogurt Parfait
Serves 2
Creamy Greek yogurt layered with warm cinnamon apples, crunchy walnuts, and a touch of natural sweetness. Greek yogurt provides plenty of protein, while apples and walnuts add fiber, healthy fats, and satisfying texture.
Ingredients
- 2 cups plain Greek yogurt
- 1 medium apple, diced
- 1 teaspoon butter or coconut oil
- 1/2 teaspoon ground cinnamon
- 1 teaspoon honey or pure maple syrup
- 1/4 teaspoon vanilla extract
- 2 tablespoons chopped walnuts
- 1 tablespoon chia seeds, optional
Instructions
- Heat the butter or coconut oil in a small skillet over medium heat.
- Add the diced apple and cinnamon and cook for 3 to 5 minutes, stirring occasionally, until the apple is slightly softened but still has some texture.
- Remove the skillet from the heat and stir in the honey or maple syrup and vanilla.
- Allow the apple mixture to cool for a few minutes.
- Divide half of the Greek yogurt between two glasses, jars, or bowls.
- Layer with half of the cinnamon apples, then repeat with the remaining yogurt and apples.
- Top each parfait with chopped walnuts and chia seeds, if using.
- Serve immediately or refrigerate until ready to eat.
Notes & Tips
- For meal prep, prepare the cinnamon apples ahead and refrigerate separately, then assemble the parfait when ready to eat.
- Leaving the peel on the apple adds fiber and texture.
- Use an unsweetened plain Greek yogurt and control the sweetness with the small amount of honey or maple syrup.
- Pecans or sliced almonds can be substituted for the walnuts.
