Apple Cinnamon Yogurt Parfait

Creamy Greek yogurt layered with warm cinnamon apples, crunchy walnuts, and a touch of natural sweetness. Greek yogurt provides plenty of protein, while apples and walnuts add fiber, healthy fats, and satisfying texture.

Ingredients

  • 2 cups plain Greek yogurt
  • 1 medium apple, diced
  • 1 teaspoon butter or coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon honey or pure maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons chopped walnuts
  • 1 tablespoon chia seeds, optional

Instructions

  1. Heat the butter or coconut oil in a small skillet over medium heat.
  2. Add the diced apple and cinnamon and cook for 3 to 5 minutes, stirring occasionally, until the apple is slightly softened but still has some texture.
  3. Remove the skillet from the heat and stir in the honey or maple syrup and vanilla.
  4. Allow the apple mixture to cool for a few minutes.
  5. Divide half of the Greek yogurt between two glasses, jars, or bowls.
  6. Layer with half of the cinnamon apples, then repeat with the remaining yogurt and apples.
  7. Top each parfait with chopped walnuts and chia seeds, if using.
  8. Serve immediately or refrigerate until ready to eat.

Notes & Tips

  • For meal prep, prepare the cinnamon apples ahead and refrigerate separately, then assemble the parfait when ready to eat.
  • Leaving the peel on the apple adds fiber and texture.
  • Use an unsweetened plain Greek yogurt and control the sweetness with the small amount of honey or maple syrup.
  • Pecans or sliced almonds can be substituted for the walnuts.
