GFFR
Lean ground beef, sweet potatoes, peppers, and onions cook together with smoky Southwestern spices for a hearty skillet meal packed with protein, fiber, and colorful vegetables. Perfect for the Blackstone or a large cast-iron skillet, this satisfying hash develops crispy edges and plenty of flavor without relying on a heavy sauce.
Ingredients
- 1 1/2 lbs lean ground beef (90% lean or higher)
- 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 tablespoon olive or avocado oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 3 cloves garlic, minced (about 1 tablespoon jarred minced garlic)
- 1 1/2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper, optional
- 2 tablespoons fresh cilantro or parsley, chopped
- 1 lime, cut into wedges, for serving
Instructions
- Peel the sweet potatoes and cut them into uniform 1/2-inch cubes so they cook evenly.
- Place the sweet potatoes in a microwave-safe bowl with 2 tablespoons water. Cover loosely and microwave for 3 to 4 minutes, just until they begin to soften. Drain and pat dry.
- Combine the smoked paprika, cumin, chili powder, garlic powder, salt, black pepper, and cayenne pepper if using in a small bowl.
- Heat a large cast-iron skillet over medium-high heat and add the olive or avocado oil.
- Add the sweet potatoes in a single layer and cook for 6 to 8 minutes, turning occasionally, until browned and crisp around the edges. Transfer to a plate.
- Add the ground beef to the skillet and cook for 5 to 7 minutes, breaking it into bite-sized pieces, until well browned. Drain excess fat if necessary.
- Add the onion and bell peppers and cook with the beef for 3 to 4 minutes until they begin to soften.
- Add the garlic and seasoning mixture and cook for another 30 to 60 seconds, stirring well to coat the beef and vegetables.
- Return the browned sweet potatoes to the skillet and gently toss everything together.
- Cook for another 2 to 3 minutes, allowing the hash to sit undisturbed periodically so the beef and sweet potatoes develop additional browned edges.
- Remove from heat and finish with fresh cilantro or parsley.
- Serve immediately with fresh lime wedges.
Notes & Tips
- Partially cooking the sweet potatoes before they hit the skillet helps the centers become tender while allowing the outside to brown and crisp without drying out.
- Blackstone option: Cook the beef on one side of the griddle and the sweet potatoes on another. Cook the peppers and onions alongside the beef, then combine everything for the final 2 to 3 minutes.
- For extra-crispy sweet potatoes on the Blackstone, spread them into a single layer and resist moving them constantly. Let each side develop some color before turning.
- A cast-iron skillet works especially well because it holds enough heat to brown the sweet potatoes and beef instead of steaming them.
- For additional heat, increase the cayenne or serve with your favorite hot sauce.
- An egg cooked over easy makes a great optional topping and turns leftovers into an excellent breakfast.
- For meal prep, refrigerate leftovers in individual portions for up to 3 days.
